I love one dish meals. For two of us it is just the way to go. Plus with no dishwasher it makes clean up easy. I am in love with this one dish meal creation. Now granted I did cheat a little with some cream cheese, but seriously everything else was just perfect. I actually think my new favorite thing is to add avocado to italian-inspired cuisine like pastas and pizza. Seriously you should try it, it is divine!
Whole-wheat butternut squash ravioli
Cream cheese & garlic sauce
Diced chicken breast
I cooked the chicken in a skillet with a little olive oil and garlic, then sauted the spinach in the same skillet, and topped it off with cream cheese, garlic, and some hot water to thin it out. Once the butternut squash ravioli was cooked I topped it with the chicken, spinach, and sauce. Then added the finishing touch—the sliced avocado!
Seriously one of my favorite dishes I have made in a long time. Next time I will try to make it with greek yogurt instead of cream cheese for a more super version.
