Salads. An easy, healthy option. But for me, salads can sometimes lose their appeal quickly. Since the weather has been so wonderful lately we have been firing up our grill quite a bit. And since we seem to have a refrigerator stock pilled with greens, we started tossing them on the grill as well. And it has been quite a nice alternative. Yum!
Freshly washed greens (bok choy and cabbage work great, but use any of your favorite leafy greens)
Olive oil & Vinegar (I like to use balsamic or apple cider vinegar)
Seasonings (my favorites are garlic, salt/pepper, chili powder, parsley)
Sometimes I chop the greens up and sometimes I leave them whole. Grill them on some aluminum foil until tender. Serve them with that bar-b-que chicken or whatever your heart desires. It’s super easy and a welcome substitute to green salad!
