In college we would eat at this little place close to campus called Food for Thought. It was great, and from what I remember they put avocados on almost everything! It’s been 8 years since I have been there (man I am getting old!), but I will never forget this amazing black bean taco that I loved ordering. I don’t even know if it is still on the menu, but here is my version of it. It makes a great lunch or a simple dinner and it is even vegetarian friendly!
Refried black beans
Heat up the beans on the stove. Then you put all the ingredients into the tortilla and, viola!, you have yourself a black bean burrito packed with 5 superfoods (including the 3 in the salsa—tomatoes, garlic, & onions)!
–Homemade salsa is pretty easy to make and seriously the tastiest, but if you don’t have time to make your own and you happen to live in central Texas, I highly recommend Ana’s Salsa (and that is saying a lot because I have a killer salsa recipe!).
–When I am making these tacos for just two of us, I cut the avocado in half and tightly wrap plastic wrap around the half with the seed then put it in the fridge, and use the other half right away. The side with the seed will stay a little longer—nature at it’s best!
–And of course you can always use some homemade guacamole if you already have it whipped up!
