I don’t know why, but I just love individual-sized food items. They are cute, they are easy, and they are generally great for leftovers.
Since my garden is handing out more tomatoes that I know what to do with, I thought I would try a “mini” recipe with them as the star. So I got to work thinking of something with a brunch twist since I needed to bring a snack for a morning women’s group I am part of, and came up with mini frittatas. It is always a little nerve racking to make other people your guinea pigs, but thankfully they were a hit! Plus I love that I got to use ingredients from my garden.
