When I signed up to make three dozen muffins for a special teacher’s breakfast at the elementary school in our neighborhood I knew I was destined to make these delicious blueberry muffins I saw on the Joy the Baker blog.
I was drawn to this recipe because for one it was made with whole wheat flour and was low in fat, plus it was filled with yummy superfoods like blueberries, oatmeal, and applesauce. Sounded perfect to me so I whipped them up and had rave reviews.
I made the recipe almost exactly as what was on Joy the Baker’s blog but made a few slight modifications listed here. Hope you enjoy!
