When the weather starts cooling off and the leaves start changing, I know it’s time to whip out all things pumpkin. I have never been a huge fan of pumpkin pie (I know, I know) but I do love a good pumpkin cookie! And these just happen to be my favorite…
This recipe is modified from a recipe I originally found on Allrecipes a few years ago. It was one of those recipes where I started making it and as I was knee deep in the process I realized I didn’t have all the ingredients so I improvised with what I had. I actually loved the results so much I now make it with these modifications every year. Sadly, the recipe is not posted on the Allrecipes site anymore so I can’t directly link to it. And even though I do modify it a significant amount, I usually like to credit the original recipe if I can. I guess it’s a good thing I printed it back in the day!
This version of the recipe feels a little “healthier” (just ignore the amounts of sugar and butter that go into it) and is filled with great things like pumpkin, oats, and dark chocolate. Hope it brings as much joy to your autumn baked goods as it does to mine. Enjoy!
