This dish is a favorite at my house. The little people who live here like to help grow and love to help harvest the carrots and fennel. They enjoy getting to watch and wait for it to come out of the oven and it’s usually the first item eaten off of the dinner plates.

When cooking with fennel, use only the tender white parts of the “bulb.” Save the green tops for salads.
