My sister and I were up in Colorado last week visiting my parents at their new home. We trekked all over the western slopes of Colorado and had a great time exploring all of the different landscapes in the area.
My parents moved to Colorado from Austin last summer and have been adjusting quite well to the “country life.” My mom even started a little garden in her backyard this summer. She says people refer to them as “gentleman farmers” and it makes sense as you compare their garden to the miles of cornfields surrounding their property.
One night while we were there we decided to grill out. We cooked local steaks, asparagus, and corn. In fact we bought the corn at a farm stand earlier that day. It’s a tad early for corn in western Colorado so they were a little small, but they didn’t lack flavor. My mom also told me that asparagus grows wild there, and that was quite tasty as well.
Today I thought I would give you two for one, and share the simple recipe my mom put together for grilling corn and the marinade I whipped together for the asparagus so you could incorporate these easy and delicious recipes with your summer meals. Enjoy!
