In honor of Fourth of July, I thought I would share a festive twist on serving an American favorite, watermelon.
This salad was inspired partly by the assortment of tomatoes growing in my backyard, and partly by the large watermelon I bought last week. Watermelon is pretty much my favorite fruit, especially during the hot summer. I think about it often, and eat it even more. The only sad thing is my husband doesn’t like watermelon. So when I get one, I am committed to it. I eat it for breakfast, lunch, and dinner (all the while he is gagging at the smell of it…I just don’t get it?!). Although I am not complaining…more for me, right?
Anyway, back to the salad. This salad was made up almost entirely by produce growing in my garden. Well, except the watermelon. I am growing watermelon, but it’s not doing very well so I bought one at the store. It’s definitely an unusual salad, but it was surprisingly delicious and refreshing with a splash of balsamic vinegar and a hint of mint.
