Growing up my mom always made a big Saturday morning breakfast. Usually we would wander in the kitchen at an obscenely late time in the morning and my mom would have this huge spread of deliciousness.
I carried on this tradition when I lived in Seattle with all my roommates, and now my husband and I try and sit down for a Saturday morning breakfast together when we can. There is just something special about hanging out with the ones you love first thing in the morning eating something delicious like bacon and pancakes.
Speaking of pancakes, they are a pretty big deal in my house. My husband, though, is a picky one when it comes to his pancakes. A few years ago I found a simple homemade pancake mix recipe online and my husband was hooked. While I do have to admit that the mix is great, I have the tendency to get bored and want to spice things up a bit. However, I have failed to meet my husband’s pancake expectations several times with my variations of peaches, cinnamon, and even cottage cheese pancakes.
But these lemon pancakes were a surprise exception that has even the approval of my husband.
I found this recipe on Pinterest and thought I would give it a shot one Saturday morning. I like to sneak in a little protein to my pancakes (shhh, don’t tell my husband) so I modified the recipe some and added almond flour and some Greek yogurt.
