When you get a bumper crop of tomatoes there are several things you can do to preserve your harvest. My go-to preservation methods are canning and dehydrating.
Canning provides fresh tomato soup throughout the winter, such a treat! I also make fresh salsas. We like using Aunt Ruby German Green tomatoes in our salsa, they are delicious!
Dehydrating tomatoes supplies a flavorful addition to pasta alfredo or any other dish you’d want to add sun-dried toms. I store my dehydrated tomatoes in the freezer instead of canning them. When I want to use them I rehydrate them in boiling water and they’re ready to go. My dehydrator does more than preserve tomatoes, I also use it to make fruit leather!
In addition to canning and dehydrating you can freeze tomatoes for later use but I’ve never tried this method.
