The year we grew over 30 tomato plants there were SO many tomatoes from what we dubbed “The Tomato Jungle.” Here’s a photo of what it looked like before things got out of control. Soon after this was taken, I had to crawl on the ground to get into the jungle for harvesting. There were so – many – tomatoes!
In addition to preserving our harvest with canning and dehydrating I had to search the internet for recipes that called for tomatoes. I came across this recipe for Tomato Cobbler and it quickly became a favorite. I adjusted the recipe using gluten free flour for the crust and I replaced the sugar with honey. It was flavorful and we used onions, basil and of course tomatoes from the garden. It froze well which was great because the second time I made it I doubled the recipe and stocked the freezer. My family enjoys being able to enjoy the tastes of summer during the middle of winter. This was the perfect recipe to do just that!
