These are probably my favorite muffins in the whole world.
I’ve never been a huge pumpkin fan. I avoid pumpkin pie at Thanksgiving and can’t understand what all the hype is about pumpkin spice lattes…personally I think they taste like cardboard.
But these muffins are different, much different. My friend Amy made these for me this past spring. I wasn’t sure what to think of them since I’m not usually into pumpkin stuff. But then I tried one. And ate like 5 of them in one sitting. (They were mini muffins…that’s a good excuse, right?)
I thought about them the next day. And then the next week. And then the next month. So I begged my friend for her recipe and thankfully she found it in her heart to share it with me.
These muffins can be made any time of year, but they are especially delicious during the fall. It just feels so right. And bonus, your vegan friends will love them!
