It seems like preparing freezer meals is quite the trend with moms and I can see why—it just takes one day of prep and then in the midst of chaos you can produce a yummy, healthy meal whenever you need it.
About a month ago, my friend Kris and I got together for a Sunday afternoon full of freezer meals. It was quite the adventure…from planning, to grocery shopping, to several bottles of wine, to tearing up over chopped onions.
Neither my friend and I have kids, but we both work full time and after a long day in the office the last thing you want to do is prepare a meal for just two people. I know my husband and I usually find ourselves eating out and/or eating something that our bodies aren’t too happy to digest. So these freezer meals help keep us in check…both in our budget and in our waistbands.
Freezing food is also a great way to preserve your garden harvests if you aren’t able to use them right away. That is why I love growing onions and peppers, because they are perfect for so many dishes and freeze super well.
After this adventurous afternoon, we created 20 meals (that we split) for just $36 each! And get this…they were actually delicious!
Below is the first of several recipes that we made—Hearty Spaghetti Sauce. This one is actually a favorite of mine and my husband’s and I make it often. I realized this past year that it keeps really well in the freezer, so we decided to make a huge batch to freeze.
The following is the recipe for one meal, so if you are planning on using it for freezer meals be sure to multiply it to make it worth your time. We made 4x this amount and were able to divide it up for 8 meals (for 2 people each). Hope you enjoy!
