Over the past few years, I have really developed a love for cauliflower. Roasting it is my absolute favorite way to eat it, but I also love a good cauliflower soup. So when I stumbled upon a roasted cauliflower soup from Two Peas and Their Pod, I knew I had to try it!
As usual, I modified it a little bit adding my own special additions like carrots and some white wine. And it was delicious! This soup has a creamier texture, even without adding a bunch of cream like many other cauliflower soup recipes I have seen.
It’s perfect for the wintry days like we’ve been having recently (yes, even in Austin, Texas!). Plus it is another great way to use up all the cauliflower growing in my garden this time of year. Hope you enjoy!
