In honor of St. Patrick’s Day I thought I would share this delicious potato recipe. Because what’s more Irish than beer and potatoes?
This is another recipe I learned at a cooking with beer class at Whole Foods (again, it was awesome and I highly recommend it). We made it with different root veggies, but potatoes—both regular and sweet—are my favorite for this recipe.
It’s not necessarily a green-centric recipe, but add a little beer bread, some corned beef, maybe a little cabbage, and definitely a Guinness and you will be having quite the festive St. Patty’s Day this year.
