So, when I first tried to hard boil the eggs from our backyard hens I was disappointed, they were impossible to peel!
Experimenting is fun and here’s what worked…1 Line up your eggs in a tray with the widest end face up.
2 Take a thumb tack and gently poke a hole. Go gently. It may take a couple of eggs to figure out how much pressure is needed to create a clean hole .
3 Boil water, add eggs and then simmer (not boil) for 16 minutes.
4 Drain hot water, then add cold water and ice. Let it sit for 15 minutes.
5 Wow! It worked…this egg is peeled with no divots or 1/2 the white removed.
Super dark yolks, indicative of grass fed hens…yummy!
