Sometimes I’d like to think that I am a genius.
And while my friends and family might not agree, I think these summer treats bring me pretty close. Because they are genius. And delicious.
Watermelon is my all time favorite summer treat. It seems like one of the last of the seasonal fruits that come and go in the grocery store. When the watermelon arrives, you know summer is almost here.
I could seriously eat watermelon every day…it’s cold, it’s refreshing, it’s summer perfection. But watermelons are large, and in my household I am the only one that eats it.
Last year I had this genius idea to slice up the watermelon with the rind on and freeze it whole. It was awesome except for the fact that your fingers started going numb from trying to hold the frozen slice.
So this year I took a different approach. And it turned out so great I thought I would share it with you. Watermelon ice pops with one ingredient…watermelon! Because why would you need to add anything else to a fruit that is perfect just as it is?
