This year I harvested my first Meyer lemons ever! I lost a few to birds, but in the end I was able to harvest five of these beauties.
I love Meyer lemons because they are larger and little sweeter than regular lemons, they almost have a hint of orange in them. And their skin is so smooth, seriously, like a baby…or something.
So I got to work thinking about how I wanted to enjoy these fruits of my labor. And, behold, some muffins were to be made!
We enjoyed these muffins on Christmas morning and my brother kept raving about them, so I’d say it was a success. The glaze is a must; it totally finishes off the muffins and brings it to another level so be sure not to skip that step.
I adapted this recipe from Food.com, but used my meyer lemons instead of regular lemons and sprinkled in some other tricks I had up my sleeve—like adding a lemony glaze! Hope you enjoy!
