Since having a baby a few months ago, I’ve been focusing on simple recipes I can make ahead and eat for a few days. Chicken salad definitely fits the bill!
This recipe is one I have been making for quite some time and I finally decided to write down the ingredient measurements so I could share it with you. I’ve never been a huge fan of chicken salads that were drowning mayonnaise, so I started making my own several years with less mayonnaise and more focus on the good stuff…like the chicken and grapes.
It’s a pretty basic recipe, but one I have made again and again, and I hope you will too! Plus, who doesn’t want a recipe you can make once and enjoy all week? It tastes great on a fresh croissant, served over spinach, or with your favorite crackers. Hope you enjoy!
