One of my 2016 goals is to use my slow cooker at least once every week for this year. I’m deeming this year “A Slow Cooker Year,” and plan to share some of the recipes I have been making throughout the year with you. This is one of my all-time favorite slow cooker recipes. I started making this pulled pork a few years ago and continue to make it on a regular basis.
I love it because it not only tastes amazing, this pork is also so versatile. When I am making this dish for a crowd I serve it as BBQ sandwiches with some homemade pickled peppers, it tastes amazing on Hawaiian rolls. If I am making a quick lunch, it tastes perfect on tacos with a sweet salsa like ground cherry salsa. Or if I want to mix it up a little, I love serving it on baked sweet potatoes with some sliced avocados and chives.
Plus, added bonus: this pulled pork also freezes amazingly well so I can pretty much have it on hand anytime.
You can use whatever beer you happen to have on hand, cheap beer or fancy beer both turn out great. Although, I would probably steer clear of super hoppy beers like an IPA as it might make it a little bitter.
However you like to eat your pulled pork, this recipe is sure to be a crowd pleaser. Hope you enjoy as much as I do!
